So I've been vegetarian for 7ish years now and I love cooking. I even think I'm pretty good at it!
I have two 'go to' recipes I make over and over again if I want to make a big meal, have people over or want to batch cool. The first is a mango peanut butter curry devised out of what was in my cupboard one weekend when I was broke and living right on Whitechapel market and had access to amazing mangos 6 months of the year.
The other is a veggie shepherd’s pie based on this recipe, which I decided to make today.
It's delicious and even meat eaters are into it. I make a bit of a bastardised version of it nowadays as I've tweaked the recipe over the years. The main changes are a layer of smoked cheese between the lentil mix and the mashed potatoes, so good. I omit the celery because celery is gross. The final change is that I sometimes make half the mash cauliflower instead of potato so it's a bit less carby which in my mind justifies the extra cheese, you totally can't tell the difference.
So today to celebrate I made a big pie and we then ate it! Simple as that.
Plant powered day… 10/10 it's my bag! There are so many good reasons to be veggie or just eat a bit less meat.
